FOOD: Cacao Energy Balls

I don’t know about you, but as previously mentioned here, I’m all about the sweet treats. But, with my teeth slowly eroding and type 2 diabetes coming quickly over the horizon, I’ve ventured (dipped a toe) into the world of healthier options.

So far, I’ve found one substitute that works; Deliciously Ella’s Classic Almond and Cacao Energy Balls. They’re rich, sticky, sweet and 100% natural. They’re stodgy enough to satisfy your cravings without the ensuing guilt.

If you’re keen to try your hand at making them, you’ll need:

200g almonds (1 cup)

400g medjool dates (2 cups)

4 tablespoons raw cacao powder

2 ½ tablespoons almond butter

2 tablespoons coconut oil

(A tablespoon of honey)

(2 tablespoons of ground oats)

A couple of mixing bowls

A food processor/heavy duty blender

A tray

Baking parchment

And to assemble them:

Begin by placing the almonds in the food processor and pulsing until they are nicely crushed.

Add the medjool dates and coconut oil and pulse until it’s fully mixed

Add the almond butter and cacao and then mix again in the food processor.

If the mixture tastes too bitter, add the honey, and if the mixture is too wet, add the ground oats.

Take a tablespoon of the mixture and roll into a ball. Continue doing this until the mixture has finished.

Place the rolled balls into the freezer for around 1 hour, then remove and store in an airtight container in the fridge.

And, whilst I know we said we were going to healthy, you could always drizzle them in white chocolate. If you wanted. I may or may not. Yep.
